6 oz cooked lobster meat coarsely chopped
(abt 2 large tails - 1 1/4 cups)
2 tbl fresh lemon juice
2 tbl mayonnaise
1 tbl capers drained
1/2 cup finely-chopped celery
Freshly-ground black pepper to taste
2 x crusty rolls
Instructions:
Instructions: Gently mix the lobster meat, lemon juice and mayonnaise in a bowl. Fold in the capers, celery and pepper to taste.

Heat the rolls in the oven until warmed through, 3 to 5 minutes. Cut each roll in half and spoon the lobster salad between the warm halves and add a few leaves lettuce to each.

This recipe yields 2 main-course servings.
