Ingredients:

2 cup toasted croutons
1 lb bulk sausage, cooked and drained
1/2 cup Monterey Jack cheese, grated
1/2 cup Cheddar cheese, grated
1/4 cup fresh mushrooms, sliced
1 x 4 ounce can chopped green chilies
8 x eggs, beaten
1 tsp dry mustard
1 tsp salt
Instructions:
Instructions: Combine the first six ingredients and pour into a greased 9 x 13 inch casserole dish. In a medium bowl, combine the remaining ingredients mixing well. Pour over sausage mixture in casserole dish. Cover and refrigerate at least 12 hours.

Uncover and bake in a preheated 325 degree oven for 35 to 40 minutes until hot.

Makes 10 servings.
