Instructions: Cook bacon in a large skillet over medium-high heat about 8 minutes or until crisp. Drain bacon, reserving 1 tablespoon drippings in skillet. Crumble bacon, and set aside.
Saute onions in hot drippings over medium-high heat 1 minute. Remove from heat, and stir in potatoes and bacon. Spoon half of mixture into a lightly greased 13- by 9-inch baking dish. Sprinkle with half of shredded Swiss cheese, and top with remaining potato mixture. Whisk together eggs, next 3 ingredients, and, if desired, nutmeg. Pour over potato mixture. Bake at 350 degrees for 30 minutes. Sprinkle with remaining cheese, and bake 5 more minutes. This recipe yields 8 to 10 servings.
