1 tbl vegetable oil
1 sm onion, chopped
2 cup diced peeled potatoes
1 cup chopped carrots
2 x Knorr Vegetarian Vegetable Cubes
4 cup water
1 pkt frozen mixed vegetables or - 1/2 cup each frozen corn, peas, string beans
Parsley
Instructions:
Instructions: Saute chopped onion in vegetable oil until soft and golden.

Add potatoes, carrots, Knorr Cubes, water, and bring to boil. Simmer 10 minutes.

Add frozen vegetables and bring back to boil. Simmer 10 minutes.

Sprinkle with chopped parsley and pepper.

*Note: You can also add some cooked small pasta for the last 5 minutes of cooking time.
