Instructions: Scrub potatoes and pierce with a fork. Bake in a preheated 400 oven until soft, about 1 hour. Cut potatoes in half lengthwise and scoop out centers leaving a 1/4" shell. Reserve potato pulp for another use. Cut shells in half, lengthwise. Spray shells with butter flavored spray, then place on a large baking sheet. Bake in a preheated 500 oven for 15-20 minutes until crisp. Sprinkle evenly with cheese, bacon bits and onion. Return to 400 oven for 3 minutes or so to melt cheese.
