2 tsp Olive oil
1 cup Chopped onion
1/2 cup Chopped green pepper
2 cup Cooked long grain rice
1/2 tsp Ground cumin
1/8 tsp Ground red pepper
1/8 tsp Dried coriander
1 x 15-oz can black beans
Instructions:
Instructions: Heat oil in skillet on medium-high heat, add onions, pepper and saute until tender. Stir in rice and next 3 ingredients. Saute 3 minutes. Add beans and tomatoes, cook 3 more minutes.
