Coconut crust: ----------------
1 cup quick cooking rolled oats
1/3 cup all- purpose flour
3 tbl packed brown sugar
2 tbl lower-in-fat grated coconut
3 tbl light margarine, melted
Instructions:
Instructions: Spray a 9" pie pan with vegetable oil cooking spray: set aside. Preheat the oven to 350F degrees In large mixing bowl, combine the oats, flour, brown sugar and coconut.

Toss to mix well. Add the margarine and flavouring.

Stir until the mixture is moist and crumbly.

Press the crust over the bottom and up the sides of the pie pan, using your fingers or the back of a spoon. You may want to dip your fingers or the spoon into sugar to keep crumbs from sticking.

Bake for 20 minutes. Let cool to room temperature.

Fill as desired.

Makes 1- 9" crust
