Low-fat graham crackers (about 2 cello-paks from 1 box)
8 oz no-fat or 1/3 fat cream cheese
1 cup powdered sugar
1 tsp vanilla OR Lemon juice
1 sm box Lemon flavored "instant" pudding
1/2 cup Lo-fat or no fat milk. (I use Super-skim)
Instructions:
Instructions: Line a rectangular or square dish/pan with whole grahams.

Beat cream cheese with mixer. Gradually add powdered sugar, do not over-beat when using Low or No-fat cream cheese as it becomes too "soft or runny".

Fold in cool-whip. Pour 1/2 atop the grahams, put another layer of grahams atop that and repeat with cream-cheese mixture atop this layer.

(There will be 2 layers of grahams and 2 layers of cream cheese mix).

Rerigerate a few hours or overnite is even better.

NOTE; Try using different flavors of pudding, the crackers serve as the crust, so use your imagination, altho the Lemon is our favorite.
