2 x frying chickens (about 2 lbs. each) cut up, trimmed of fat
2/3 cup water
1/2 cup lemon juice
2 tsp dried mint leaves
1/2 cup Italian seasoned bread crumbs
1 tsp ground cinnamon
1 tsp parika
Instructions:
Instructions: Place chicken pcs. on plastic bag or large bowl. Mix together, water, lemon juice, and mint; pour over chicken. Marinate at room temperature or seeveral hrs. in the refrigerator, turning frequently. Drain chicken. Combine remaining ingredients in heavy paper bag. Place chicken pcs. a few at a time, in paper bag; shake to coat chicken. Arrange chicken pcs. skin-side up in nonstick pan or baking sheet. Bake, uncovered in a 375* oven 1 hr., or until crisp.
