Instructions: Now on to the practical for your green beans in salt pork ( a mighty yummy dish) a few minor changes will give you the flavor but much less fat.
Slice and Dice the salt pork into tiny 1/4 to 1/3 inch dice. (1/4 inch is best or smaller). Fry this out VERY slowly over medium low heat until it is crisp and crunchy. Remove from the fat with a slotted spoon and let what ever fat clings to the pieces go into your recipe. You will have flavor and not all the fat. (The slow cooking will release more fat and stir it often because once the outside crisps all the remaining fat will be sealed inside the pieces.) If you have a recipe that calls for bacon try this same thing. You will find you can use about half the bacon or pork called for and get the flavor you wish. Email this Recipe:
