Instructions: Lowfat spreads - I really like using pureed beans as my base. Canned chick peas or navy beans are my favorite. I rinse and drain them. Thin them with reserved bean juice, or even better with silken tofu. Roasted garlic is a favorite addition. I recently did one with canned salmon. It was yummy too. If you want something "creamier" Id suggest yogurt cheese as a base. Id think a bit of lemon juice, maybe some tarragon, and youd have a respectable mayo substitute. Fat free cottage cheese is a good base too. I always rinse and drain it in a colander. Now that Ive learned most fat free ricotta is better for you (nutritionally) I try to use that where available.
