Instructions: To prepare the Lumpia Sauce, blend the cornstarch and brown sugar together in a small saucepan. Stir in the water, pineapple juice, soy sauce, and vinegar-water mixture.

Heat the mixture to a boil over moderate heat, stirring frequently. Boil the sauce for 2 minutes to thicken. Meanwhile, warm the oil in a small skillet.

Saute the garlic in the warm oil for 2 or 3 minutes. Add the garlic to the sauce and keep warm while you prepare your Lumpia.

To prepare the Lumpia, warm the oil in a large skillet over medium-high heat.

Saute the onion and garlic until tender, about 2 or 3 minutes. Add the shrimp and pork, and cook for about 8 to 10 minutes.

Stir in the bamboo shoots, carrots, and green beans. Saute until the vegetables are tender, yet still crisp. Season to taste with salt and pepper.

To assemble your Lumpia, place a single wrapper flat on a clean surface.

Place a lettuce leaf on the wrapper. Spoon about one-quarter cup of the filling onto the lettuce. Fold the lower half of the wrapper over the filling, then overlap the sides to enclose the filing with the wrap. Seal the wrap with a dab of water on the edges. Serve warm with Lumpia sauce.
