Instructions: Put an inch or two of water in a medium saucepan, add the sugar, and bring to a boil. Add the corn, return to a boil, and cook about 5 minutes, until heated. Drain and cool under cold running water. Pat dry with paper towels.
Add the red and green bell peppers, onion, and cheese; toss well. Add the oil and toss to coat. Season with cumin, salt, pepper, and cayenne to taste. Serve at room temperature. Email this Recipe:
