Instructions: To prepare pie,make basic pastry dough and chill. Roll out 1 pie dough ball into 12" circle on lightly floured surface.Place circle into 9" microwaveable pie plate to form bottom crust. Measure out 1 cup reserved cherry juice.Combine 1/4 cup of the juice and cornstarch in 1 qt.microwaveable casserole.Stir in remaining 3/4 cup juice and sugar and blend.Microwave on high until boiling and thickened,3 to 4 minutes,stirring once.Stir in cherries.Pour into bottom of pie crust.. Roll out second pie dough ball in same manner as bottom crust and place over filling.Cut a few decorative slashes in crust to vent steam.Tuck upper crust under lower crust.Flute edges or press with fork.
To prepare glaze,beat together egg and milk in small bowl and brush on top crust.Combine sugar and cinnamon and sprinkle on top.Microwave pie on high until juices start to bubble through slits in crust.8 to 12 minutes,rotating 1/4 turn after 4 minutes.Place pie on baking sheet,transfer to conventional oven and bake at 425 deg.until crust is golden brown,8 to 12 minutes.Makes 6 to 8 servings...
