Instructions: Wrap tortillas in foil and place in 250 degree oven to warm. To cook meat, boil in large pot with onion, salt and pepper, about one hour or until cooked through. Cut into 2-inch sections, going against grain of meat; shred meat and set aside.
In large skillet, saute onions, pepper and jalapeno until tender. Add meat and tomatoes and cook for about two minutes, just until warm. In large bowl, lightly beat eggs with hot pepper sauce, salt and pepper. Add to meat mixture and scramble. Serve with flour tortillas and ketchup or salsa. This recipe yields 6 servings.
