Instructions: Cream the butter and half the sugar until pale, add the egg yolks, almonds and zest and beat until light.
Whisk the egg yolks and the rest of the sugar to a stiff snow, fold into the almond mixture and then blend in the flour. Fill into greased shell patty pans and bake at 200C/400F for about 10 minutes. When cool, turn out and coat with chocolate. Saltanas or currants can also be added to this mixture. Serve with afternoon tea. Email this Recipe:
