4 x eggs
1/4 tsp salt
2/3 cup sugar
1 tsp pure vanilla extract
1 cup sifted all-purpose flour plus more
Instructions:
Instructions: Heat oven to 375 degrees. Generously butter madeleine or mini-muffin pans. Dust with flour, and tap out the excess.

Beat the eggs, salt, and sugar together until thick, about 8 minutes. Add the vanilla. Fold in the flour, rapidly but gently. Fold in the butter gently, but make sure it does not settle to the bottom. Quickly spoon the mixture into madeleine or mini-muffin pans.

Bake until golden, about 10 minutes if using madeleine pans, or about 14 minutes if using mini-muffin pans. Remove pan from the oven, remove madeleines from pans, and transfer to a wire rack to cool.

This recipe yields about 3 dozen cookies.
