1 pkt Pillsbury Refrigerated Chocolate Chip Cookies (18-ounce) with Walnuts, softened*
1 x ( 8-ounce) pkg. cream cheese, softened
1 x (7-ounce) package (2-2/3 cups) flaked coconut
Instructions:
Instructions: Heat oven to 350 degrees F., Line 12 muffin cups with paper baking cups. In large bowl, combine cookie dough an cream cheese; stir in coconut. Spoon dough evenly into paper-lined cups.

Bake at 350 degrees F., for 30-35 minutes or until muffins are golden brown and toothpick inserted comes out clean in center. Carefully pour 1-2 tsp liquer over each warm muffin. Cool 5 minutes.

Remove from muffin cups. Serve warm or cool.

Makes 12 muffins.

*TIP: To soften cookie dough, unwrap dough; place in microwave-safe bowl.

Microwave on Medium for 30-40 seconds.

High Altitude (above 3500 feet):
Add 1/4 cup flour to cookie dough mixture. Bake as directed above.

I have made up a batch of homemade chocolate chip cookie mix and refrigerated it instead of buying the pre-made brand. I can make up a batch and keep refrigerated for up to three weeks. I usually add about 1/2 - 1 cup of walnut pieces chopped fine. As far as the coconut, I buy in large quantities and I use just a scant under 3 cups. I dont use the liqueur. Not for my own preferences.
