Instructions: Sprinkle fish with lemon juice, salt and pepper; set aside. In a saucepan over medium-high heat, melt butter. Cook onions and peppers 2 minutes, until barely tender.
Add tomatoes with their juice; reduce heat to medium and simmer 8 minutes, until sauce thickens. Stir in cilantro. Add hot pepper sauce to taste. Heat oil in large non-stick skillet over high heat. Saute fish 3 minutes per side, until cooked through. Transfer to a serving platter. Spoon sauce over fish. This recipe yields 4 servings.
