Instructions: Heat the oil in a large, deep skillet. Saute the onion until translucent, about 4 minutes. Arrange the chicken, rib side up, in one layer over the onions. In a small bowl, combine the orange juice, honey and basil. Add the garlic and orange zest. Pour mixture over the chicken. Simmer the chicken, covered, for 20 minutes. If using boneless, skinless breasts, check for doneness after 15 minutes. Turn the chicken and cook, still covered, 10 minutes longer, or until done. Remove the chicken to a serving platter and cover it with foil to keep warm. Add the mandarin orange sections to the pan and boil gently, uncovered, until the sauce is reduced to 2 cups, about 12 minutes. Pour the hot sauce over the chicken and serve.
