3/4 lb boneless skinless chicken
2 tbl oyster-flavored sauce

1/2 cup chicken broth
3 tbl dry sherry
2 tbl soy sauce
1 tbl dark soy sauce
1 tbl vinegar
1 tbl sugar
1 tsp hot pepper sauce
----------------- COOKING ----------------
2 tbl cooking oil
6 sm dried red chilies
2 tsp minced garlic
1 sm zucchini cut 1" cubes
1 sm onion cut 1" cubes
1 cup sliced water chestnuts or jicama
2 tsp cornstarch dissolved in
1 tbl water
Instructions:
Instructions: Cut chicken into 3/4-inch pieces. Place in a bowl and add oyster-flavored sauce; stir to coat. Let stand for 10 minutes.

Combine sauce ingredients in a bowl; set aside.

Place a wok over high heat until hot. Add oil, swirling to coat sides. Add chilies, and garlic; cook, stirring, until fragrant, about 10 seconds. Add chicken and stir-fry for 1 minute. Add zucchini, onion and water chestnuts; stir-fry for 30 seconds. Add sauce and bring to a boil. Reduce heat to low, cover, and simmer for 2 minutes. Add cornstarch solution and cook, stirring, until sauce boils and thickens. Add Diamond Sesame Glazed Walnuts and toss to coat.

Serve over steamed rice.
