1/2 x 6 oz can frozen orange juice concentrate thawed
1/3 cup white wine
1/4 cup orange marmalade
1/2 tsp ginger
----------------- MANDARIN ORANGE CHICKEN: ----------------
4 x skinless boneless chicken breast halves 4 oz
11 oz canned mandarin orange segments drained
1/2 cup green grapes halved
2 cup cooked rice
Instructions:
Instructions: Heat oven to 350F. In 12x8-inch (2-quart) baking dish, combine all sauce ingredients; mix well. Add chicken; turn to coat. Bake at 350F for 45 to 60 minutes, or until chicken is tender and no longer pink, basting occasionally and adding orange segments and grapes during last 5 minutes of cooking.

Serve with rice and vegetable.

NOTES : Turn ordinary chicken breasts into something special with Holland House White Cooking Wine. The results are mouthwatering.
