Instructions: In a large skillet, over medium heat, heat 3 tablespoons oil and saute onion until soft, about 5 minutes. Stir in garlic, ginger, chili, cardamom and cinnamon. Cook, stirring frequently, until onion is golden brown, about 5 minutes more. Remove from pan and set aside, reserving pan for chicken.
Season drumsticks with salt. Add remaining tablespoon oil to skillet and heat over medium high. Add chicken and cook on all sides until lightly browned, about 5 minutes. Add mango, onion mixture and wine. Cover and simmer over low heat for 25 minutes, or until chicken is tender. To serve, garnish with fresh cilantro. Email this Recipe:
