Ingredients:

4 lb green mangoes peeled and cut up
2 cup white vinegar
1/2 cup raisins (golden is best)
1/2 cup currants
1 x clove garlic minced
1 tsp ground ginger
1 tsp coarse (pickling) salt
1/4 tsp cayenne pepper
1/8 tsp mustard powder
Instructions:
Instructions: Combine first 9 ingredients in large pot. Bring to a boil over medium-high heat, stirring often. Simmer slowly, stirring occasionally, for 20 mins until mango is soft and a bit mushy.

Stir in sugar. Cook 10 mins more, stirring once in a while until sugar dissolves. Pour into hot sterilized jars to within 1/4 inch of top. Seal.

Yield: 5 half pints
