Instructions: In a medium skillet, melt butter over low heat. Cook onion and green onions 5 minutes, until softened. Stir in broth, cream, salt, pepper, and nutmeg. Bring to a boil. Reduce heat to medium and cook 15 minutes, until liquid is reduced to 2/3 cup, and is thick enough to coat the back of a spoon.
Chop spinach; add to sauce and mix very well. Cook, stirring occasionally, 5 minutes, until very hot. This recipe yields 6 servings.
