Instructions: Preheat oven to 375 degrees F. Grease a 13- x 9 inch baking dish. Core the apples and peel them about half way down their sides. Arrange in the prepared dish (if the apples tip over, cut a small slice off the bottoms). Mash together
In a small dish, or process together in a food processor, the brown sugar, candied ginger, cinnamon, cloves, and lemon peel. Stuff this mixture into the apple cavities. Pour the hot water, maple syrup, and lemon juice around the apples and tilt the dish to combine the liquids. Bake, uncovered, 40 to 45 minutes, until the apples are tender but not mushy when pierced with the point of a sharp knife. Brush or spoon with the juice every 10 or 15 minutes. Remove from the oven. Continue to baste with the cooking syrup for 15 minutes to glaze the apples as they cool. Serve warm (with whipped cream or ice cream, if desired). Yield: 6 servings. Email this Recipe:
