1/3 cup pure maple syrup
3 tbl cider vinegar
1 tbl brown mustard
1 tbl soy sauce
1 tbl vegetable oil
1 x clove garlic finely chopped or minced
1/2 tsp ground black pepper
Instructions:
Instructions: In a small bowl, whisk together the syrup, vinegar, mustard, soy sauce, oil, garlic and pepper. Place salmon in a shallow dish, and pour marinade over the fish (preferably a glass dish). Turn to coat. Cover with plastic wrap, and refrigerate for 1 hour, turning once. Remove salmon, and place on either broiler pan, or on dish while you prepare the grill. In the meantime, pour off excess marinade into small saucepan, bring to a boil, and then simmer for 5 minutes to reduce to 1/4 cup. Add a bit of water if it gets too thick. When the broiler or grill are ready, brush salmon with heated sauce, and cook until flaking, taking care not to over cook. Estimate 10 minutes per inch thick.
