Ingredients:
Amount Ingredient
1/3 cup Maple syrup
1 tbl Spicy brown mustard
1/4 tsp Salt
1/4 tsp Pepper
1/4 cup Dry breadcrumbs
4 x Pork cutlets, (4-ounce)
2 tsp Olive oil
1/2 cup Apple cider
2 med Golden Delicious apples, each cored and cut into 16 wedges
Instructions:
Instructions: Combine first 4 ingredients in a small bowl; stir well with a wire whisk, and set aside. Place breadcrumbs in a large zip-top plastic bag. Add pork; seal bag, and shake to coat pork with breadcrumbs.

Heat oil in a large nonstick skillet over medium heat. Add pork, and cook 2 minutes on each side or until golden brown. Add cider and apple wedges; bring to a boil. Reduce heat, and simmer, uncovered, 10 minutes or until pork is done. Add maple syrup mixture, and cook 5 minutes or until thick and syrupy.

Yield: 4 servings (serving size: 3 ounces pork and 8 apple wedges).

Serving Ideas : Sprinkle with parsley.
