4 cup fresh Pumpkin, peeled and cubed (about a 1 1/2-pound pumpkin)
1/2 cup unpeeled Red Delicious Apple, cored and chopped
1/2 cup Onion, finely chopped
1/3 cup Raisins
3 tbl Maple Syrup
1/4 tsp Salt
Instructions:
Instructions: Warm the clarified butter in a heavy skillet over medium-high heat. Add the cubed pumpkin, apple, onion, and raisins. Cover and cook the mixture for about 20 minutes or until pumpkin is tender, stirring occasionally. Stir in the maple syrup, salt, and ginger, and serve.
