Instructions: Preheat oven to 350 degrees. Arrange carrots, parsnips and turnips in a single layer in shallow roasting pan.
Heat butter and maple syrup in a small saucepan just until butter is melted, about 2 minutes. Remove from heat. Add rum. Pour maple mixture over vegetables and toss thoroughly to coat. Add salt and pepper to taste. Cover pan with aluminum foil and bake 25 minutes. Remove pan from oven. Stir vegetables and bake, uncovered, until tender, 20 to 25 minutes longer. Email this Recipe:
