2 slc bacon, chopped
1 lrg onion
1 med green pepper, chopped
1/2 cup peeled chopped tomatoes
2 cup canned or fresh corn
1 x bay leaf
1/4 tsp salt
Instructions:
Instructions: Cook bacon in large skillet until crisp; remove and set aside, reserving drippings in skillet. Saute onion and green pepper in drippings until tender. Add tomatoes and bay leaf; bring to boil. Reduce heat and simmer about 5 minutes, stirring occasionally. Stir in corn; return to a boil.

Reduce heat and simmer again about 5 minutes. Add salt and pepper. Remove bay leaf. Sprinkle in bacon.

Serves 6.
