6 x ears of corn
1 med onion, chopped
1 clv garlic, chopped
1/2 x bell pepper, chopped
Oil
1 x chicken, cut in pieces
Salt, black and red pepper
1 lrg can whole tomatoes
Instructions:
Instructions: Season chicken with salt and peppers. Heat oil in thick iron pot and fry chicken until brown. Remove from oil and set aside. Discard oil and wash pot clean. Cut the corn away from cob twice in order to get some of the juice. Put enough oil in pot to cover bottom. When hot, add corn, bell pepper, onion and garlic. Stir mixture over medium fire until slightly brown. Remove from heat. Add tomatoes and more seasoning and stir well.

Put chicken in with corn and enough water to cover mixture. Cover with a tight lid and simmer until chicken is tender, about 30 minutes. Serve over rice.
