Instructions: Prepare brownie mix according to package directions using 1/4 cup egg substitute, 1/4 cup water, and vegetable oil; spread in a lightly greased 13- by 9-inch pan.
Beat remaining 1/4 cup egg substitute, cream cheese, sugar, and peppermint extract at medium speed with an electric mixer until well blended. Pour over brownie mixture, and swirl gently with a knife. Bake at 350 degrees for 35 to 40 minutes or until lightly browned. Cool in pan on a wire rack. Cut into 1-inch squares. Cover and chill. This recipe yields 4 dozen.
