1 lb boneless skinless chicken breasts cut 1" chunks
1 lb boneless skinless chicken thighs cut 1" chunks
1 can diced tomatoes - (28 oz) undrained
1 can whole-kernel corn - (15 1/4 oz) drained
1 pkt frozen cut okra - (16 oz) thawed
2 can reduced-sodium chicken broth - (14 oz ea)
1 tbl hot pepper sauce
1/2 tsp liquid smoke
Instructions:
Instructions: In a soup pot, combine all the ingredients over high heat and bring to a boil.

Reduce the heat to medium and simmer for 40 to 45 minutes, or until no pink remains in the chicken and the gumbo thickens, stirring occasionally.

This recipe yields 10 servings.

Serving size: About 1 1/2 cups.

Comments: This "festive as a Mardi Gras parade" soup needs just a small scoop of cooked rice to help us sop up its flavorful juices.
