Instructions: Preheat oven to 350 degrees. Blend cookie crumbs and butter in a small bowl. Press mixture onto bottom and up sides of a 9-inch pie pan. Bake 12 minutes; cool completely. Mix lemonade, tequila, lime juice, Triple Sec, lime peel and food coloring in a large bowl. Add ice cream, and mix well...do not let melt. Spoon mixture into cooled crust, cover with plastic wrap, and freeze overnight. (Can be prepared 2 days ahead.) To serve, cut pie into wedges; transfer to plates; top each serving with a dollop of whipped cream and a lime slice for garnish. Source. "La Comida", a restaurant in Cody, Wyoming.
