Instructions: Boil potatoes with skins until you can pierce them with a fork. Let cool until you handle them. Peel. Cut in eights. In seperate bowl add mayo, vinegar, oil, salt and pepper and parsley flakes till it is nice and creamy and a little loose. If need be add more oil and vinegar. Pour over potatoes and mix gently.
NOTES : My dad use to make this potato salad, and me being the only one of 5 girls who LOVES to cook, gets elected every time to make it. Its not a written down recipe, my dad never shared it, but thru trial and error Ive come up with this. Email this Recipe:
