Instructions: Heat oven to 400 degrees F. Beat egg white until foamy. Beat in sugar, 1 tablespoon at a time. Continue beating until stiff and glossy. Do not underbeat.
Beat in vanilla. Stir in nuts. Spoon 1 level tablespoon egg white mixture into each cracker; spread to edges. Place crackers slightly apart on ungreased cookie sheet. Bake 7 to 9 minutes or until golden brown. Store loosely covered. Yield:1 1/2 dozen cookies (2 per serving). Email this Recipe:
