One head of purple cabbage
1/3 cup vinegar white or cider works best
1/4 cup brown sugar
1 x sliced apple (any variety) peeled
Instructions:
Instructions: Remove first outside leaves of cabbage and discard. Chop remaining cabbage into bite-sized pieces or strips. Place in Dutch oven (or real large pot) with a good lid (dont add any water, REALLY!). Add remaining ingredients, stir, bring to an easy boil; then cover and simmer on low until done (about 45 minutes), stirring as needed.

Mariota Says: This dish holds up well in the refrigerator for up to a week or more. Individual portions can be easily zapped in the microwave. Delicious as a side vegetable with any type of protein.
