Instructions: Combine the first 4 ingredients in a colander; rinse and drain, then pour into a large bowl. Add chopped onions and stir to mix. Combine remaining ingredients (balsamic vinegar through garlic) in a small bowl, pour over other ingredients, and toss gently to coat. Cover and marinate in refrigerator at least 4 hours, stirring occasionally. Serve using a slotted spoon.
NOTES : Good over a bed of lettuce with pita bread on the side, add some chopped fresh tomatoes right before serving. Email this Recipe:
