Amount Ingredient
1 can chickpeas - (15 oz) drained, rinsed
1 can Roman beans - (15 oz) drained, rinsed
1 can artichoke hearts - (14 oz) cut into quarters
1 cup diced celery
3/4 cup diced red onion
1/2 cup roughly-chopped pitted black olives
1/3 cup red wine vinegar
1/4 cup olive oil
1/4 cup freshly-chopped Italian parsley
1 tbl minced garlic
1/2 tsp dry mustard
Instructions:
Instructions: In a large bowl, combine all of the ingredients, and toss well to combine. Cover and chill for 30 minutes to several hours to allow the flavors to blend. Toss the salad again before serving.

This recipe yields 6 cups.
