Instructions: Peel and seed cucumbers.
Mix together the oil, vinegar, sugar, salt, and pepper. Fill a clean picking jar with alternating layers of onions and cucumbers, adding a pinch of salt and pepper after each layer. When the jar is filled, pour over pickling liquid, cover with the top and shake. Refrigerate at least 12 hours before serving. They will hold their flavor and consistency 10 days to 2 weeks.
