Instructions: Slice goats cheese in half horizontally to make four rounds.
Arrange in a lightly oiled shallow dish. Make the marinade: blend ingredients until fairly smooth then pour over the cheese. Cover and chill for at least 2 hours spooning marinade over the cheese occasionally. Preheat oven to 190C/375F/Gas Mark 5. Prepare salad: cut tomatoes in half and arrange cut side up in a baking tin. Sprinkle with salt and roast for 45-60 minutes until soft. Leave to cool. About 30 minutes before serving remove cheese from fridge. Arrange the salad leaves on a serving platter. Add tomatoes onion and top with cheese and remaining marinade. Serves Email this Recipe:
