Instructions: Slice the cheese very thinly.
Beat the marinade ingredients lightly together in a bowl and season to taste. Coat the cheese slices in it cover and chill for 24 hours. Just before serving take the cheese out of the refrigerator. Trim both ends of each fig and slice each one in about 34 round slices. Arrange the cheese and fig slices decoratively on a round platter. Dribble the marinade all over and scatter the mint on top.
