6 to 8 as an appetizer
Ingredients:
Amount Ingredient
1/2 x - 2 lbs (675-900 g) new white or red potatoes (choose the smallest ones)
1/4 cup (60 ml) extra-virgin olive oil
1/4 cup (60 ml) chopped fresh herbs such as parsley, chives, oregano, or
rosemary
2 tbl (30 ml) white wine vinegar
Salt and freshly ground pepper to taste
Instructions:
Instructions: Boil the potatoes in salted water just until tender - do not over-cook. Drain the potatoes. Whisk together the remaining ingredients and combine with the potatoes while they are still warm, tossing to combine. Refrigerate for at least 2 hours. Serve cold or at room temperature.

Serves 6 to 8 as an appetizer.
