Ingredients:

3 x Bell peppers, preferably a mix of colors, roasted
3 tbl Olive oil
1/2 tbl Balsamic vinegar
1 tbl Orange Juice
1/2 tsp Grated orange rind
1/4 tsp Dried basil
1/4 tsp Salt
1/8 tsp Dried thyme
Freshly ground pepper, to taste
Instructions:
Instructions: 1. Cut the roasted peppers into 1/2-inch wide strips. Place in a small mixing bowl; Set aside.

2. Mix the remaining ingredients. Pour over peppers. Serve on leaf lettuce.

Use fresh herbs when they are available. Crumbled goat cheese would be a delicious addition.
