2 lb boneless pork loin
1 cup soy sauce
1 cup apple cider
1 x garlic clove minced
1 tbl freshly ground black pepper
1 cup apple butter
1 tbl prepared horseradish
1/8 tsp five spice seasoning
Salt to taste
12 slc whole grain bread
1/3 cup Dijon-style mustard
1 lrg sweet-tart apple cored and thinly sliced
Instructions:
Instructions: Place pork roast in self-sealing plastic bag; mix together soy sauce, apple cider, garlic and black pepper; pour over pork, seal bag and refrigerate overnight (4 to 24 hours). Remove pork from marinade (discard marinade), place in shallow pan and roast in 350-degree oven for 45 minutes to 1 hour, until internal temperature (measured with a meat thermometer) is 150 to 155 degrees. Remove from oven, let rest 15 minutes.

Meanwhile, in a small bowl stir together apple butter, horseradish and five spice seasoning; taste for seasoning and add salt to taste. On one side of 6 slices of bread, spread a few tablespoons of apple butter. On other slices of bread, spread mustard.

Layer apple slices on mustard-laced bread slices; place lettuce leaves on apple buttered bread slices. Thinly slice pork roast and place about 2 ounces of pork on apple slices. Wrap and refrigerate any leftover pork roast.

Close sandwiches and serve; or wrap securely, keep cool until serving.
