6 med beets
2 med carrots
1 sm turnip
1/2 tsp paprika
1/4 tsp ground cinnamon
1/4 tsp ground cumin
2 tbl orange-juice concentrate
2 tbl fresh lemon juice
1 tbl olive oil
Salt and freshly ground black pepper, to taste
Lettuce leaves for garnish

Instructions: MAKES 4 SERVINGS. VEGAN

Preheat oven to 450 degrees. Wrap scrubbed and/or peeled root vegetables in aluminum foil; place on baking sheet. Bake until tender, about 1 hour.

While still warm, cut vegetables into eighths. Toss with paprika, cinnamon, cumin, orange-juice concentrate, lemon juice and oil. Cover: let stand 1 hour at room temperature to marinate. Season to taste with salt and pepper.

Line platter with lettuce leaves and mound salad in center; garnish with chopped parsley.

Makes 4 servings.
