Instructions: Finely dice onions.
Combine marinade ingredients in a bowl, add salmon and turn to coat. Allow to marinate in refrigerator for at least 2 hours. Turn every 1/2 hour. Drain and pat dry. Butter an oven proof tray, place salmon on top, brush with melted butter, cook in a moderate oven 180C/350F for about 10 minutes (varies on thickness) or until fish flakes easily. Combine breadcrumbs and remaining melted butter, mix gently to coat bread but retain crumbs.Loosely pack onto top of each fillet, place under a hot grill until golden brown. Serve with lemon wedges.
