8 lrg scallops without corals
8 x scallop corals
4 tbl dry white wine
1 oz pickted ginger shredded
4 oz sugar snap peas blanched
1 sm galia melon cubed
1 x mango peeled and diced
1 x chilli finely diced
3 tbl sesame oil
1 tbl liquid honey
1 tbl soy sauce
Instructions:
Instructions: Poach the corals in the wine for two minutes cool and dice.

Thinly slice the scallops horizontally.

Combine the scallops corals ginger peas melon mango and chilli.

Toss this mixture in a dressing made from the remaining ingredients and the natural juices from the fruits.

Season to taste.

Raw scallops are sweet tender and delicious.

In fact by the time you eat them they will have been "cooked" by the marinade.
