Instructions: Poach the corals in the wine for two minutes cool and dice.
Thinly slice the scallops horizontally. Combine the scallops corals ginger peas melon mango and chilli. Toss this mixture in a dressing made from the remaining ingredients and the natural juices from the fruits. Season to taste. Raw scallops are sweet tender and delicious.
