Ingredients:
Amount Ingredient
1 lb fresh swordfish
----------------- MARINADE ----------------
1/4 cup canola oil
1/4 x cider vinegar
2 x bay leaves
Tabasco sauce
1/2 tsp salt
1 tsp freshly-ground black pepper
----------------- RELISH ----------------
3 x nectarines finely diced
1/2 cup finely-diced onions
1/4 cup finely-diced red pepper
1/4 cup raisins
1/4 cup walnuts chopped
1 tbl dried red pepper flakes
1/4 x cider vinegar
1/4 cup sugar
Instructions:
Instructions: Combine marinade ingredients in noncorrosive bowl, then add the swordfish. Allow to marinate for 1 to 2 hours.

Remove fish from the marinade, and grill for 4 minutes on each side. The flesh should remain slightly pink at the center. Remove from the grill and arrange on a large serving platter or individual plates.

For the Relish: Place all ingredients in glass or plastic bowl, and blend together well. Refrigerate overnight, if possible, to enhance flavor. Top fish with a little of the relish.

This recipe yields 4 servings.
